Guacamole
2 ripe avocados, peeled and pit removed
2 TBS. fresh lemon juice
Salt and pepper to taste
1 4 ounce can chopped, mild green chilies, drained
1 medium tomato seeded and chopped fine
1/2 (or more to taste) small onion, finely minced
1 small garlic clove very finely minced (or you can use garlic powder)
Mash with a fork or potato masher, the avocado with the lemon juice, do not
mash to a puree, leave in some chunks - stir in salt, pepper, chilies, onion,
garlic and diced tomato. Stir, cover and refrigerate until serving time. To
prevent browning of the guacamole, place one of the avocado pits on top
before covering the container.
