Polynesian Jerky

Here is one my brother gave me, I only made it once, and I don't know why. It was really tasty.

Hawaiian Jerky

2 lb Lean meat, thinly sliced (London Broil Works Beautifully)
1 teaspoon Salt
1 teaspoon ginger
1 tb Brown sugar
1/4 teaspoon Pepper
1/8 teaspoon Cayenne pepper
1 Crushed garlic clove
1/4 c Pineapple juice
1/4 c Soy sauce

Mix all together and marinate at least overnite. I generally do a 24 hour marinating. Don't worry if your meat is not swimming in the marinade, just move the pieces around every couple of hours. Follow your dehydrator manufacturer's directions on time, but I generally allow 12 hours. But, that was in Colorado, I'm not sure how it's going to work out back here with the higher humidity.

Oh Yeah, I forgot to add. When you slice the meat, it's much easier to slice very thinly if it's partially frozen.

thanks but I have done that for a long time, for lots of recipes, sure makes for easier and more uniform slices
